The Tasmanian Leatherwood honey comes from the pristine wilderness of south-western Tasmania. Blossoming from huge trees which can grow to 100 feet, the white flowers of the Leatherwood tree are the source for 70% of Tasmania's honey. Every summer the bees are taken into the rainforests where they find the white flower of the Leatherwood tree. The honey they provide from the Leatherwood nectar has a very distinctive spicy aroma and a strong piquant flavour that is sought by connoisseurs of honey the world over. Unlike many other honeys, this honey has not been filtered or heated, so it comes to you just as it's found; the pure, natural flavours intact, and a fine candied texture. If you prefer honey liqid, simply sit the tin in hot water until the contents clear.

Spicy and deeply complex, this honey has been supporting the export economy of the small southern Pacific island of Tasmania for over 100 years. The flavor is very fine with a subtle spice and savory quality - the sweetness is certainly present but seems to dominate the flavor less than say, clover honey.

    Tasmanian Leatherwood Honey tastes like what I imagine it would be like to walk through a rain forest (without the snakes, screaming monkeys and poisonous frogs). It's extraordinary to the point that you want to eat it just plain, off the spoon. Taste the floral silkiness with its other-worldly, warm finish and you'll think, lucky bees! Lucky me to find it here.
