Sadaf Pomegranate Molasses also known as Pomegranate Paste or concentrate is used primarily in Persian or Mediterranean cooking. Pomegranate molasses is a syrup-like reduction of pomegranate juice that has a really unique, tart-sweet flavor and is colored a gorgeous, deep burgundy red. It is as thick as maple syrup with sweet and sour flavors that have similar tasting notes of balsamic vinegar with lush fruit. Great as an ingredient in an array of Middle Eastern dishes, it is the sort of addition to sauces and stews that add enormous depth of flavor but most people cannot identify.  We love to use Pomegrante Molasses in stews that feature poultry.
